Camping Recipe: Try These Hot & Hearty Breakfast Options

Super Easy Quiche Recipes

For each quiche, you’ll need:

  • One frozen 9” pie crust
  • 6 eggs
  • 1/3 cup sour cream
  • 2/3 cup shredded cheese (cheddar is our favorite, but go with cheese you like! Mozzarella, pepper jack, and cheese blends are also good)

Filling suggestions:

  • Ham & cheese quiche: include 2/3 cup fully cooked diced ham.
  • Meat lovers: cook and crumble 1/3 cup mild Italian sausage, 4 slices bacon, and 1/3 cup fully cooked diced ham.
  • Garden fresh: dice and saute lightly in vegetable oil: ½ onion, 1 Roma tomato, 4 baby bella mushrooms, and 4 baby sweet bell peppers. Once the onions are tender and translucent, add ½ cup frozen chopped spinach, heating through until the spinach is soft.
  • Sausage & shrooms: 2/3 cup cooked and crumbled mild Italian sausage and 6 sliced baby bella mushrooms (saute the mushrooms in the sausage drippings).
  • Mix and match your favorite flavors!

Prepare in advance:

  • Crack eggs into a medium mixing bowl. Add sour cream and beat until it’s smooth – there will be a few tiny lumps, but that’s okay.
  • Add cheese and other fillings of your choice as suggested above. Stir gently to combine.
  • Transfer mixture into a gallon-size food storage bag. Seal and stick in the fridge overnight.
  • In the morning, preheat the oven to 350. Prick some holes in the pie crust with a fork.
  • Pour the quiche mixture straight into the pie crust. I usually snip a corner tip from the bag and pour the egg mixture from this makeshift “spout.”  
  • Bake for 30-40 minutes at 350 degrees until lightly browned on top and a sharp knife inserted comes out clean.

If a crusty quiche isn’t your thing, use these flavors to fancy-up your scrambled eggs. Make sure all meats used are cooked ahead of time, then pour the egg mixture into a hot, oiled skillet and scramble. It’s a perfect breakfast to enjoy with a hot cup of coffee, and you can also make it on the outdoor cooktop of your new or used RV!
